Did you know you can put pancake mix in the oven?


...and maybe I put a little whipped cream on them too for the fun of it. Also, I recently perfected making whipped cream (a glass bowl makes all the difference) and will not buy it in a can ever again.
For the topping, I used a frozen fruit mix of blackberries, strawberries, blueberries and raspberries. I heated them on the stove top for just a few minutes and added just a few pinches of sugar to syrup them up a bit (but that's obviously not necessary).
This would make a great Fourth of July breakfast and it's super easy and so much less of a mess than all those pancake drippings all over your stove!
Do you have a favorite pancake recipe to suggest? This was a just add water mix, but I'd love to do a little more of the "from scratch" variety in the future!
