Did you know that February is Heart Month? What better time to focus on our hearts than the month that celebrates love in so many ways. Heart Month calls for heart healthy recipes, right? Today, I am sharing this recipe for stuffed peppers made heart healthier!
We try hard to focus on healthier eating and foods that are good for our heart health since we have a strong family history of diabetes and heart disease. After having gestational diabetes with both of the boys, I am a little more aware of their eating habits as well as mine since this puts us at a higher risk in the future of developing diabetes, which can lead to heart disease, stroke and so many other illnesses. Being aware of what we eat doesn't mean our food has to be boring though, this recipe is anything but boring and it's actually a lot easier than it looks! Here's what you'll need.
Heart Healthy Stuffed Peppers
Ingredients:
1lb lean ground turkey
1 package quinoa or brown rice (or a mix, like our favorite)
6 bell peppers (each color will have a slightly different taste - so you can choose a mix)
1 can Hunt's Diced Tomatoes
1 medium yellow onion
1-2 Tablespoons Olive Oil
1/2 Cup of Shredded Cheese

Remove from pan and enjoy!

1 package quinoa or brown rice (or a mix, like our favorite)
6 bell peppers (each color will have a slightly different taste - so you can choose a mix)
1 can Hunt's Diced Tomatoes
1 medium yellow onion
1-2 Tablespoons Olive Oil
1/2 Cup of Shredded Cheese
Instructions:
- Preheat Oven to 350 degrees
- Prepare Quinoa/Brown Rice according to package instructions
- Our favorite quinoa comes with a Mediterranean spice pack, but you can choose your spices here, but be sure to continue to go light on the sodium for the ideal Heart Healthy Recipe.
- While Quinoa is cooking, brown turkey meat and set aside
- Cut the tops off of your Peppers, save tops to dice for topping, and remove the seed
- Dice 1/2 of your yellow Onion, set aside
- Add peppers to a baking dish.
- Once meat and quinoa are full cooked, you can either mix them together or layer into your pepper. Then top with Hunt's Diced Tomatoes, Diced Onion, and left over diced pepper tops.
- Bake at 350 for 30-35 minutes, sprinkle cheese on top, then cook for another 5 minutes or until cheese is melted.

Remove from pan and enjoy!
