Roasted Italian Sausage and Veggies Over Parmesan Rice Recipe

In our family, we eat a lot of rice and pasta. These are staples because the kids will eat them almost every time. For most rice dishes, I can make the rice separately and add it into our main dish as I wish, leaving some to the side for the kids. I always encourage them to eat the main dish but even if they only eat a few bites of veggies or protein, I know their bellies will be filled with delicious grains.

Today I want to share a new delicious, quick and easy recipe that incorporates easy-to-make rice, veggies, and Italian sausage. This recipe is flexible and family friendly. It has great options for the little ones, as well as enough for leftovers for mom and dad's lunch because it reheats beautifully. My best tip on what veggies to include is to just peruse the vegetable section at your favorite grocery and pick what jumps out at you. I was really impressed with the selection of fresh veggies I found at Walmart late on a Sunday evening.

I picked up broccoli, a combo of bell peppers, red potatoes, zucchini, and a huge bushel of parsley. I also wound up with two flavors of Uncle Ben’s® Flavor Infusions Parmesan & Butter and Uncle Ben’s® Flavor Infusions Garlic & Butter. For our recipe I'll be using the Uncle Ben’s® Flavor Infusions Parmesan & Butter, but I made the Uncle Ben’s® Flavor Infusions Garlic & Butter for a simple lunch for the boys and me.

Roasted Italian Sausage and Veggies.

Since it only takes 10 minutes and you only have one bag with flavor already infused, it's super convenient and really good. There is much less mess and I can use them resealable bag over and over since it has 8 servings.

Now, here's what you came for, this recipe is easy and delicious and will only take you about 35-40 minutes start to finish! Most of that time though is just waiting on a timer to ding!

Roasted Italian Sausage and Veggies.

Here's what you'll need for Parmesan Roasted Veggies and Italian Sausage:

Makes 4 Servings

Ingredients


½ lb Italian Sausage
1-2 Bell Peppers (Red and/or Yellow)
1 Small to Medium Zucchini
2 Red Potatoes
1 Head of Broccoli
Parmesan Cheese
Parsley
2-3 tablespoons Italian Spices (Garlic, Rosemary, Thyme, Oregano, Basil)
¼ cup Olive Oil

Instructions

  1. Preheat oven to 400 degrees.
  2. Line a baking sheet with foil and spray with cooking spray or brush with olive oil
  3. Chop veggies and spread them out onto the foil.
  4. In a small bowl whisk Italian spices and olive oil, then pour onto veggies, tossing to coat.
  5. Cut Italian sausage and add it to the veggies.
  6. Place veggies and sausage into the oven and set your timer for 15 minutes. (see #7) Check veggies, toss with a spatula to turn, add parmesan cheese if desired, and return to oven for another 15 to 20 minutes. Check your sausage to make sure it’s cooked to 160 degrees (check packaging for temperature instructions).

  1. While your veggies are cooking, follow the instructions on Uncle Ben’s® Flavor Infusions Parmesan & Butter rice. Set aside while veggies are finishing.
  2. Serve Veggies and Sausage over rice topped with a sprinkle of parmesan cheese, garnish with fresh parsley.
