Hearty, Healthy Dinner on The Go with truRoots

For some reason, I can't get myself into eating salads at home these days. I used to be pretty good about this and really crave a good salad every few days, but I'm just kind of not feeling the leafy greens these days when they aren't in a dish or in a sandwich. I think it may also have to do with the changing season. Anyhow, I just found my solution to not letting all my fresh ingredients go to waste!

Not only are they not going to waste, they are being mixed with hearty quinoa that will actually keep my full longer!

This is technically a recipe post, but I'm going to use that term loosely. This is more of a lunch or dinner idea post that you can totally make your own, but here's what I used this time for this

Sprouted Quinoa Weekday Salad:

  • cherry tomatoes
  • red bell pepper
  • green onion
  • parmesan cheese
  • olive oil
  • balsamic vinegar
  • pepperoncinis, chopped 

Putting it all together is easy! 

1. While you follow the instructions on the truRoots packaging, you'll have 15 minutes to chop, halve, dice, and shred all of your ingredients. 
2. Once quinoa is finished, toss all ingredients
3. Drizzle with oil and vinegar
4. Enjoy! 

This combination was delicious and the pepperoncini really made the flavors pop! This dish can be served warm or chilled. You can also ransack your own refrigerator and use all the yumminess you have to create your own favorite salad.
