Easy Dinner Time in a Hurry!

Being a working (outside of the home) mama, nights are pretty short for us. By the time I get home from picking Jonah up it's time to eat dinner, get a bath, have a few minutes of play time, and get ready to put him to bed. To be honest, if he is just going to NaNa's the next and not too dirty, I sometimes let him skip the bath and we facetime with family or go for a walk instead, but it's rare though that he's not TOO dirty!

If he has school (mother's morning out) the next day, I have to also make sure he has a nice play outfit, a back up, diapers, wipes, a cup with his name all packed and ready to go. 

With all of the hustle and bustle though, we really make a point to still sit down together and eat nearly every meal at our table when we are at home. In fact, this has become such a habit, we are almost forced to sit and eat so Jonah will eat! If you get up early, it's over, he's not eating anymore and he's slooow. So, this is when we get in our family discussion time.

I always dream of having meal plans and homemade frozen meals ready to go, but honestly, it has just never happened. My weekends are for playing, chores, and photography and sewing projects! They are short and after we moved on from homemade baby food, hours of slaving in the kitchen on the weekends have nearly vanished! 


So, we are always looking for easy semi-homemade meals. This involves lots of pasta, salads and sandwiches. Grilled Cheese is at least a weekly rotation. Sometimes with Turkey or Tomato on the inside. I even occasionally make my own pimento cheese and grill it up on the stove between to pieces of whatever bread we have at the time!

Grands!® Grilled Cheese Sandwiches

Ingredients
can (16.3 oz) Pillsbury® Grands!® refrigerated buttermilk biscuits (8 biscuits) 2 teaspoons vegetable oil 8 slices (2/3 oz each) American cheese
Separate dough into 8 biscuits. Press or roll each to form 5 1/2-inch round.
In 10-inch skillet, heat oil over medium heat until hot. Add biscuit rounds, a few at a time; cook 3 minutes. Turn; cook about 3 minutes longer or until light golden brown. Remove from skillet.
Place 2 slices of cheese on each of 4 biscuit rounds. Top with remaining biscuit rounds.
Return to skillet; cook 2 to 3 minutes or until golden brown. Turn; cook about 2 minutes longer or until cheese is melted.

When I saw this recipe from Pillsbury, I knew it was the one I had to try. Of course I didn't follow direction to a T, but I totally should have. Ours turned out a little crispier than I would have liked (I used the smaller pack of jr's and split the layers) but they were all eaten when it was all said and done. I call that success!

We paired our Grilled Cheeses with a chopped salad and since there are only three of us, we had left over biscuits, so I made a Monkey Bread Bites for desert! They are really just a mini version of this recipe.  SO GOOD!
