Happy Mardi Gras Friends! Laissez les bons temps rouler!

Last weekend I, on a whim thought I'd make some beignets for breakfast as a treat. My mom made them this way for us as kids on random Saturday mornings and we loved it! This was my first time and I'd actually kind of forgotten about it until recently. These don't hold a candle to the beignets of Cafe De Monde nor do they claim to be healthy in anyway. Other than they make me happy!

Ingredients

  • Canned Biscuits
  • Oil (vegetable, canola or your favorite)
  • Powdered Sugar

Instructions

  1. Cut your canned biscuits into 1/4 pieces
  2. Heat about 1/2 inch of oil in your skillet to about 350 degrees and carefully drop in several pieces of dough, using tongs, flip when the bottom side starts to brown.
  3. Remove from oil and roll in powdered sugar then let rest on paper towel until cool!

Okay, I lied, there's a fourth step. Restrain from eating them immediately as you will burn yourself and there will be none left for your sweet family who has obviously been waiting patiently on their breakfast!

You could also roll them in white sugar, sugar sprinkles, sugar in the raw, etc for fun alternatives. I think there may have been a time when we were out of Powdered Sugar and my mom used just regular granulated sugar and it was so good we kept making her do it that way! Beignets are really just dough nuts but if you've ever had one from Cafe De Monde you curse me for that statement. It's always fun though to add a little Lagniappe to our weekend!

What little something extra do you do on the weekends for your family?!
